This book by Sitepoint is a pretty helpful start, and Informit also featured a simple overview awhile back. In general, check out anything Thomas Fuchs/Scriptaculous-related.

For DOM stuff, I'd totally recommend the DOM Scripting book by Jeremy Keith.

For AJAX, hmm, not sure of a real professional answer. I do most of my AJAX stuff using jQuery which makes it plenty easy (try taking a look at their AJAX docs and AJAX demos).

I've been snooping around for the same reason and I found http://24ways.org/ to be very helpful in learning some basic and useful AJAX.

I recommend going from the bottom up for some hands-on tutorials on AJAX and some other practices related to the web.

Just noticed that AjaxImpact featured a nice archive of tutorials...
